Ingredients

Simple Syrup

  • 2 tbsp coarsely grated peeled ginger
  • 2 cinnamon sticks
  • 4 whole black peppercorns
  • 4 whole cloves
  • 1 star anise pod
  • 3/4 of a cup sugar

Instructions for the simple syrup

  1. In a small saucepan over medium-high heat, bring ginger, cinnamon sticks, peppercorns, cloves, star anise (if using), and 1 1/2 cups water to a boil. Reduce heat to medium and simmer, stirring occasionally, until liquid is reduced by about half, about 20 minutes. Add sugar and stir until dissolved. Remove from heat and let cool about 10 minutes. Strain through a fine-mesh sieve into a heatproof container or bowl. The simple syrup can be stored for up to a month in the fridge, and re-used for any recipe that requires simple syrup. 

Instructions for the cocktail

  1. In a cocktail shaker, combine egg white, wine, brandy, lime juice, vermouth, and simple syrup. Dry shake for 10 seconds. Open and add ice (watch for the pop), shake for another 20 seconds until chilled. Strain into a chilled coupe glass. Sprinkle with ground cinnamon.
