Keith has been working with the National Honey Association for quite some time, along with food processors, breweries and distilleries that want to incorporate honey into their product. We talked about the 300+ honey varieties, different viscosity and colors, the bees, the biggest consumer of honey in the market right now, best suggestions for fermentation, filtering, and of course selection of honey-based!
