And what an honor, an hour and forty-five minutes of brandy history, production, aging and everything in between with a true craftsman and master. We chatted about his early days, grape brandies, why acidity plays an important role, favorite grape varieties for distillation, favorite books and where does Dan sees American brandy, and why having patience is so important across all spirits!
