Pineapple Demerara Syrup

Our whole family loves pineapple and we go through a lot of it during summer, but it always seems such a waste to throw out the core and skin, especially when there is still good pineapple left on it. So when we came across making a demerara pineapple simple syrup from the skin and core of the pineapple we were sold!

And this recipe requires no cooking, no blending, just left over from you cutting the pineapple, sugar, lime and time!

So I started by separating the core, skins and any of the left over from the pineapple that didn't make the cut, into a bowl!

After that I simply added the Demerara sugar, and the peel of a fresh lime. 

And the peel of a lime, which I chopped into smaller pieces, so it can incorporate better.

I then mixed the entire thing, covered with some food wrap, and I let it sit for about 4-6 hours. The sugar and lime will break down the liquid in the pineapple and create something so delicious, that will probably never go back to regular simple syrup for your summer cocktails!

I then strained it into a clean container and refrigerate it up to a few weeks. But keep in mind from a medium / large pineapple you only get about 5-6 ounces of the Pineapple Demerara simple syrup, but a small quantity can go a long way with this!
