The process of re-charring a barrel has been used in the whiskey distilleries for decades as a way to extend the life of a barrel.
The shaved, toasted and re-charred process is a fairly new addition that was a creation of the late Dr. Jim Swan, STR refers to a specific formula for the Shaving, Toasting and Re-Charring wine barrels with the goal to producing amazing red fruit forward spirits.
And we approached aging our Baton Brandy is such a way. It starts with taking French wine barrels and having their barrel ends removed.
We then have the outer layer of the wine soaked barrel shaved to a specific depth to expose a combination of fresh oak. After the shaving process is completed, we toast the barrels for a minimum of 20 minutes over open fires using the left-over barrel staves from the barrel making process to fuel that fire. The shaving process reduces some of the bolder wine flavors, allowing for a more subtle red wine influence, while providing the backdone to our flavor layers.
Finally, our barrels are re-charred providing a carbon layer to maximize flavor extraction during the barrel aging process. This process removes harsh oak tannins and breaks down unwanted chemical bonds replacing them with sugars, vanilla and spice notes.
